Taco Night!!!


I had some leftover grilled salmon from the night before. I warmed the 4 oz. filet and whipped up a chive and lime sour cream sauce, wrapped in a flour tortilla with spinach, grape tomatoes, red peppers and had mini salmon tacos. That was not enough for dinner so I also poached some chicken and then sauteed with taco seasoning and onions. Taco toppings included: freshly grated Monterey Jack, Jack's fresh salsa, sour cream, etc. On the side was mexican rice and black beans sauteed with red peppers and onions. 4 noms!
