Thai Red Curry!




This was a really easy and tasty concoction made with coconut milk! red curry paste! Thai fish sauce (sounds gross but it's necessary for the right flavor)! brown sugar! green peas! bell pepper! onion! lime juice! red chili oil & extra red pepper flakes for spice! I added chicken that I marinated in soy sauce, ginger, lime juice, garlic, and red chili oil! Served over aromatic jasmine rice! Nom!!!

Everything in Thailand is HAPPY!

Banana Bread For Dat Ass



This was my first banana bread adventure and I went the "healthy" route by using whole wheat flour and honey. Actually I think this is the first time I've ever baked bread. I kinda liked it.

Chicken Tortilla Soup




I made this CTS with tomatoes, garlic, onion, cubanelle peppers, enchilada sauce, corn, cilantro, chicken broth, cumin, chili powder, and various other sundries. Cooked it in the crock pot on high for about 4 hours. It was soooo good. Topped it with avocado and cilantro (forgot to add the tortilla strips before I took the photo, but they were added afterwards!). We ate the soup with just a slice of ciabatta.

Roman Nom Chicken



I haven't been this excited about dinner since... well just since NYE, but still... this dinner was so lip-smackin' good that I sit here writing this nom blog entry with my arms precariously perched on top of my swollen belly, barely reaching my laptop to type. This is a Giada recipe (no shame in that) called "Roman Chicken". We used chicken breasts, red and yellow bell pepper, tomatoes, prosciutto, garlic, white wine, chicken stock, capers, and some delicious fresh herbs. We paired it with a healthy and delightfully well-matched brown rice and fresh green beans. I will be thinking about this one for weeks to come.
