Chicken Chile Enchilada Casserole


Chicken Chile Enchilada Casserole, not the best I've made, but it tasted better than it looks here, 3.5 out of 5 Noms. Side of fresh green beans from the garden steamed then sauteed with a Vidalia onion and a bit of garlic.

Sunday Brunch


Open faced sando for brunch yesterday on wheat toast. Sauteed onions with olive oil and garlic. Added the eggs, chopped basil and sage Topped it off with sliced tomatoes, salt, pepper and parm. The onions, basil, sage and tomatoes were from the garden.

I really with these pictures weren't "phone" quality.

Taco Night!!!


I had some leftover grilled salmon from the night before. I warmed the 4 oz. filet and whipped up a chive and lime sour cream sauce, wrapped in a flour tortilla with spinach, grape tomatoes, red peppers and had mini salmon tacos. That was not enough for dinner so I also poached some chicken and then sauteed with taco seasoning and onions. Taco toppings included: freshly grated Monterey Jack, Jack's fresh salsa, sour cream, etc. On the side was mexican rice and black beans sauteed with red peppers and onions. 4 noms!

Leftover Brat Goodness!

So we cooked up a bunch of brats and stuff for Father's day and had some leftovers, so for last night's dinner we cooked up some yellow, red and green pepper with vidalia onion in olive oil and garlic. Then tossed the cooked veggies with the leftover brats to warm them up and served it over california short-grain brown rice from the DFM(dekalb farmers market). 3.9 Noms

Grilled Pizza on the BGE (Big Green Egg)


This recipe requires special equipment: a BGE (big green egg) and a pizza stone made specially for the BGE. We got pizza dough from our local pizzeria and i picked up the folllowing deliciuos ingredients: fresh spinach, fresh arugula, thinly sliced prosciutto, boar's head pepperoni, fresh variety of mushrooms, mozzarella and feta cheese.
We heated the BGE with the pizza stone up to 350 degrees and dressed the pizza on the grill.
These were our pies:
  1. pepperoni and mushroom pizza
  2. prosciutto pizza with arugula tossed in lemon and olive oil
  3. pepperoni, feta and spinach za (pictured)
Delicious and fun! 4 noms. It was so good I forgot to take a pic until the last pizza.

Saturday Brrrrreakfast

Obviously a house favorite, chedda eggs and sauteed red bell pepper with bacon on a toasted english muffin and leftover salad on the side to get the day going healthy style.
